Brettanomyces Bruxellensis!
No, that is not a spell that Harry Potter used to defeat Lord Voldemort, though we do think there is something magical going on in our Brett IPA. And we have Brettanomyces Bruxellensis to thank for that, one of a number of wild yeast strains in the Brettanomyces family and the star of our latest special release.The strains of Brett are obviously related just by the fact that they are all nearly impossible to spell, with siblings having names like Custersianus and Naardenensis. They would make for quite an interesting family sticker on the back of an SUV!
This marks the third release of what has turned out to be one of our most popular special release beers. We all know this is an IPA city, so we begin with our tried and true IPA, aged it in French oak chardonnay barrels, and spiked it with Brettanomyces. The basic recipe in the three versions of Brett IPA remains unchanged, though the natural tendency of the wild Brettanomyces yeast to remain, well, wild, means that there is batch variation. And this batch is unique in the fact that we used a mix of the French oak chardonnay barrels that were used in the very first Brett IPA as well as first-use barrels. The end result is a harmonious blend of citrus notes and a good dose of dry funk- just how we like it.
An extra note of interest: this is the first time our GAI bottling line was used to bottle the Brett IPA. The first two batches had to be bottled by hand, as the bottling line was not equipped to handle the 25.4 oz bottles used for the Brett IPA. We were able to procure parts to remedy this, put Packaging Manager Nate Jackson to work, and voila! 118 cases of Brett IPA are ready to hit the public.
The release of this beer coincides with the unveiling of our brewery expansion, which you may have spotted out of the corner of your eye or if you squinted really hard. The addition of sixteen 150 Bbl. fermenters, as well as a centrifuge and new canning line, should propel us from the 14,700 barrels we produced in 2015 to over 20,000 in 2016, and eventually 30,000+. We look forward to being able to grow and consistently provide a quality Marble product to our accounts across the state…and beyond!
